Grilled Balsamic Asparagus



Hi everyone! Today I am super excited to share my Balsamic Grilled Asparagus experiment today!  I really enjoyed the flavor.  One thing that I will caution is to make sure that you really rinse the asparagus well, or else the asparagus will be gritty.  Here's a pic of the marinade:


Here's what you'll need to make this yummy dish:

1. Asparagus
2. Balsamic Vinegar 1 cup
3. Olive Oil 1/2 cup
4. Lemon (1)
5. Salt to taste
6. Pepper to taste

Instructions:

The first thing to do is to make a marinade.  Wash and dry the asparagus.  Then place in a dish and add all of the ingredients on top of the asparagus.  Cut a lemon in half.  With one half slice into thin pieces and add to the marinade like the picture shows.  Next squeeze the other half over the asparagus.  Cover the dish with plastic wrap and let sit for 2 hours.  Then grill and serve.  Here's another pic:

Pot Roast Recipe Made Easy


Hi everyone!  Today I want to share with you a Christensen family Sunday dinner staple: Post Roast!  My sister in law Amanda asks every time we eat this if she can have this for her birthday dinner.  (Her birthday dinner isn't until February!)  Here is a few pics of the veggies:


You might be wondering why we separated the veggies... well my dad hates, I repeat HATES cooked carrots, so we separate them for him :)


Here's what you'll need to make this melt in your mouth pot roast:

Ingredients:

Rump Roast
Onion
Carrots
Potatoes 
Beef Stock
Celery
Rosemary
Thyme
Montreal Steak Seasoning
Salt 
Pepper
Minced Garlic

Instructions:

First, season the meat to taste.  Then brown the roast in a pan with 4 tbsp of canola oil until roast is browned on all sides.  Next place roast in the bottom of pot and add 2 cups beef broth.  Then add the vegetables cut up. Cook the roast at 300* convection for 4 hours.  Then remove the vegetables and let the roast rest for about 10 minutes.
