Chicken and Broccoli Bake

Hi everyone!  Sorry that my post is a little late today... anyway today I want to share with you a family favorite Chicken and Broccoli Bake!  I thought that this was my mom's original recipe until a few days ago... yep that's right she crushed my dreams.  Anyway this recipe comes from the Lion House Recipes Cookbook.   


I realize that this picture isn't doing this yummy recipe justice, but trust me it is sooooo good!  Here's a close up of what it looks like with some yummy brown rice:


Ingredients:

4 chicken breast halves
3 packages (10 ounces each) frozen broccoli cooked according to package instructions, or 2 pounds fresh broccoli, well trimmed and cooked until tender crisp
1 can (10 1/2 ounces) cream of chicken soup
1/2 cup milk
1/2 cup mayonaise
1 cup grated  Cheddar, cheese
1 teaspoon lemon juice

Directions:

Simmer chicken breasts in water just to cover for about 30 minutes, or until tender.  Remove chicken from broth and cool enough to handle.  Then remove the skin and bones and slice or break into large pieces.  

In a 9x9x2-inch pan, arrange broccoli with flowerettes pointed out toward the edge of the pan.  Lay chicken meat over broccoli.  Make a sauce by combing soup, milk, and mayonnaise and stir until smooth.  Add cheese and lemon juice. Pour sauce over chicken and broccoli to cover the chicken pieces completely. Cover pan with aluminum foil and bake at 350* degrees F for about 30 minutes.  Makes 5-6 servings.

DIY Monogram Plaque Tutorial

Hi everyone!  Today I want to share with you my super cute DIY Monogram Plaque:


Ok, on to how you make it!  First I bought a wood plaque and a letter:


Next find some cute tissue paper and cut it roughly in the shape of your letter:


The next step is to put some Mod Podge on the wood and then put on the tissue paper and smooth out the wrinkles.  The letter C has 2 layers of the light blue tissue paper.  


When my sister in law Amanda and I saw the plaque we knew that we wanted to tone down the stripes a little bit.  To do that we added a layer of light blue to the striped tissue paper:


Once dry, hot glue the letter to the plaque.  Here is a close up:

I think that this would be darling on a shelf, or hanging on a wall with a bunch of pictures!  What do you think?

Super Duper Double Delicious Shakes


Yep, you just read that name right!  The Super Duper Double Delicious Shake is pretty famous with my friends and family. Ever since I was little we have called these shakes by this name. They are so yummy and are pretty much a Sunday tradition in the Christensen household.  My dad is a shake guru!  Here is what you'll need to make your own Super Duper Double Delicious Shake:


1. 2-3 cookies or 2-3 brownies
2. 6 mini candy canes
3. 1 banana
4. 1/2 cup milk
5. 4 large scoops of mint chocolate chip ice cream

Then all you do is blend it all together:

I love these shakes!  And they take about 2 minutes to make! I guarantee a lot of smiles with this fun shake!
