Hi everyone! Today I want to share another family favorite: Danish Aebleskiver Pancakes! Traditionally Danish Aebleskivers are cooked in a special pan that looks like this:
They are super fun to eat like this, but it takes a really long time to feed a lot of people, so my dad had the ingenius idea to make larger pancakes that take a fraction of the time to feed everyone :) Aebleskivers are fluffier than normal pancakes. Here's a side view:
Now on to the recipe:
Ingredients:
6 egg whites
6 egg yolks
2 cups buttermilk
2 cups flour
2 tablespoons sugar
1 teaspoon baking soda
1/2 teaspoon salt
powdered sugar (optional to put on when eating)
Instructions:
Beat egg whites just until stiff peaks form. Set aside. Beat egg yolks until lemon colored. Mix in buttermilk, flour, sugar, baking soda, and salt. Gently fold in beaten whites. Cook on a griddle at medium heat. Cook until bubbles form around the edge and flip them over. Cook the other side until golden brown. Add butter and powdered sugar, or jam and then eat!
